Tomatoes and Salsas

Tomatoes are almost as abundant as zucchini if the crop is good. One simple way of storing tomatoes is to simply freeze them in resealable plastic freezer bags whole! I couldn't believe it the first time I tried this but it works. Freeze several to a bag-you don't have to wash them-I wiped them off with a towel. When you are ready to use them, pull out a bag and place on the counter to thaw. The skins slide off, but running under warm water is fine too. I cut mine into wedges and use in a salsa recipe, adding all the ingredients in my blender. It's great!
